With a total of 11 years of maturation, and the last 24 months spent in an ex-Palo Cortado sherry cask, this Caol Ila is a sweet, maritime and smoky concoction. The nose evokes fishing creels and nets with smoky wooded tones joining in. Touches of winegums and toasted marshmallow linger with apricots and strawberries, ending on toasted oat and ashy peat smoke.

Matured for a total of 13 years, the final 2 years of this Caol Ila were spent finishing in ex-Sassacaia red wine casks, a 'super Tuscan' red wine from Italy. The cask shows its character immediately with blackcurrant, dried fig and black forrest fruityness wrapping around Caol Ila's meaty peat smoke. The smoke and fruit mingle together, combining to create a distinctive fruity, peaty concoction that has made this on-going release from G&M so popular.

The nose starts off with classic Caol Ila notes of dry ashy smoke and sweet light fruit, with notes of smoked pears, quince jelly and fresh strawberries. There is a robust earthiness and sweet peat smoke notes on the palate, with notes of salted liquorice and zesty lime juice. The finish is long, with sweet peat notes lingering with fresh baked bread and lemon zest.

Bottled from a single refill Hogshead cask, this Caol Ila expression from Douglas Laing & Co is unmistakeably an Islay beast. The nose carries notes of sweet peat, along with Caol Ila's characteristic coastal nature, and dirty coal soot. The Palate offers notes of spun sugar, coal smoke, dry firewood embers and burnt toast. The palate is rather sweet compared to the nose and initial palate, with candied like sweetness, becoming drier and spicier towards the end

A brand-new 14 year old selection from the team at Elixir, choosing from their famous stocks of Caol Ila. Candied lemon peel, lime juice and dusty dark chocolate all build in the glass with an undercurrent of wood smoke coming through. Rich lemonade with a touch of chilli spice deliver brightness while the texture is rich with tones of light caramel and tarragon. Wonderfully long with a beautiful balance of citrus and herbs and a light peat smoke carrying through.

From the northern edge of Islay, the Caol Ila distillery is known for a slightly more refined smoke character, with citrus fruit and and a gentle sweetness that mingles with the peat. Sophisticated and lingering, a great introduction to some of the smokier whiskies from the Island.

The Elements of Islay series is back with the new CI 14 from Caol Ila distillery. This bottling is a marriage of one 2015 American Oak hogshead, two 2012 ex-oloroso sherry butts and one 2013 ex-oloroso sherry butt. The nose is full of coastal smoke, savoury notes mingling with sweet caramel, thick fruit chutney and smoked mackerel. The palate ramps up the sweetness and adds layers of rich dried fruits, raspberry coulis and cherries. Orange zest dances with smoke and spice. A balanced and lasting finish, comprised of dark chocolate, fresh pomegranate and bonfire embers.
