The Thomson Whisky Distillery was founded by Matt and Rachael Thomson, starting with small-scale home distilling in 2005, before moving to a commercial operation in 2014. This whisky distillery is located in Riverhead, which is northwest of Auckland. It is made from 100% New Zealand-grown malted barley, smoked using South Island Peat, and was still distilled through a copper pot. This creates flavour notes, including iodine, smoke, and sweet vanillin's.
