Aultmore 'Signatory' 100 Proof Exceptional Cask' 2007 / 17 years old 57.1%

Part of Signatory's new 'Exceptional Cask' series, this 2007 Aultmore was aged for 17 years in 1st-fill Oloroso sherry butts. The spirit of Aultmore is quite delicate, so these casks have really shown their power, offering dense and robust wood-driven flavours of hard toffee, dried fruits and plenty of spice. A rich note of toasted walnut and dark chocolate adds depth in the finish which is long and with an earthy dryness.
