Opened in the late 20th century with the intention of producing what was then a new unpeated style. Before maturation Craigellachie is sulphury much like Mortlach, Glenrothes or Benrinnes, with maturation the sulphur vanishes replaced with complex savoury notes. This heavy style makes Craigellachie perfect for maturation in powerful casks such as the Ex-Sherry butt which matured this. On the nose find dark chocolate, raisins, vanilla, and a touch of roasted coffee. The palate is characteristically full bodied, spicy, and with a definate savoury note, the finish is long and powerful.
