Situated on the remote Hebridean Island of the same name, Raasay Distillery was founded in 2014. While the island is no stranger to distilling, Raasay is the first legal distillery to be built there. With fewer than 200 inhabitants, Raasay is a tight knit community, the distillers aim to be at one with the island, maturing and bottling on site and employing many locals. To create the signature lightly peated style the distillers first source 100% Scottish grown barley. Half of it peated and half unpeated, with each spirit type matured separately in Rye whisky, Chinkapin, or Bordeaux wine casks. The final Single Malt produces a lightly peated aromatic smoke with cherries and blackcurrant. Black pepper, crystalised ginger and sandalwood add balance to the body of the dram. Finally, ending on butterscotch with a hint of saltiness.
