This is one of the rare examples of STR cask maturation, a method pioneered by Dr Jim Swan. Shaving, toasting and re-charring to maximise flavour extraction from the wood, this example being a Red Wine Barrique hailing from Portugal. On the nose a rich sticky date pudding, flavours of ginger and nutmeg with zesty orange. Mouth coating cherry jam, baked fruits, walnuts and fruit cake spice enter the palate ending with a long, nutty and complex finish.
