Orkney 'Signatory' 2005 / 17 years old 55.4%

A not-so-secret bottling from the famous Highland Park in the Orkney's, this ex-sherry single cask shows the special character of this distillery. Initially there is a flavour of caramel roasted nuts, old-fashioned oat cakes drizzled with honey, accompanied by fruit leather and baker's spice. A gentle touch of peat tinged with heather comes through on the palate, finishing with caramelised orange.
