Distilled from barley grown at Philip O'Brien's Sheestown farm, this is the second release from Waterford's ongoing single farm origin whisky. Head distiller Ned Gahan describes this release as aromatic with malt, honey and pears, joined by orange peel and summer hay. The thick and oily appearance of the whisky indicates a full and rich mouthfeel, carrying honeycomb, barley sugar and ginger-spicyness. To finish, more citrus and a spicy quality that tingles the palate.
