While not stated on the label, there are only two choices for the source of this new 'Unnamed' Signatory from Orkney, it is highly plausible that this is Highland Park, matured for 14 years in ex-Oloroso casks. Evocative of rich and savoury notes like dried mushrooms and roasted malted barley, the flavour then moves to Christmas spiced oranges and dark heathery honey. With the heavy cask influence, a lingering peatsmoke and saltyness comes through late in the finish.
