A crunchy white chocolate walnut blondie served with a bison beach cocktail and best enjoyed while tossing wooden balls at a coconut shy.

Notes from the SMWS panel:

Coconut galore – milk, oil, dried, toasted, creamed, husk. You name it, we got it. Other aromas mentioned were lemon curd, mango salsas and fruit and nut bars.

On the palate, we got crunchy white chocolate walnut blondies laced with caramel and served with a shot of espresso. Dilution brought a whiff of buttery samphire next to candied almonds served with a bison beach cocktail – a mixture of vodka, aperol, apple cider and fresh lemon juice giving it a distinctive vanilla and herbal flavour.

Following nine years in an ex-bourbon barrel, we transferred this whisky into a first fill heavy-toast medium-charred barrel.
